Title: Salmon Patties (Baked)
Categories: Jewish Fish
Yield: 1 Servings

1lgCan salmon
2 Potatoes
  Butter
1 Egg
  A little grated onion
2tbBread crumbs or Matzoh meal
  More bread crumbs
  Margarine

Cook potatoes and mash with butter. Mash salmon [including any skin and bones; the skin has flavor and the bones have calcium -JW] with juice. Add the potatoes, egg, and bread crumbs. Mix and form into patties. Roll in additional bread crumbs to coat.

Cover a cookie sheet with foil and melt some margarine on it. [or spray with a nonstick cooking oil spray to reduce calories- JW] Place patties on the cookie sheet.

Bake 350 degrees 1 hour. Turn patties when crusty. [This sound too long- keep a close eye on things after 30 minutes- JW]

NOTE: I usually add a little salt & pepper and dill to taste. [And I would add a LOT all the time! -JW]
